It
all started with our move to Ruidoso, New Mexico—from
Texas—back in 1999, and if you’ve never been here, let
me tell you, New Mexico is truly “The Land Of
Enchantment” in every sense of the word; beautiful,
natural, warm and instantly welcoming… just like the new
friends we met here. I tasted my first real “Bizcochito”
in my very own kitchen, after stumbling across the
recipe in a magazine. Having baked many different types
of cookies over the years, I instantly loved the
Bizcochitos’ uniqueness, but soon ‘tweaked’ that recipe
to make it my own: a dash extra of this, a tad less of
that, and voila! ...my own modest version of a very old
recipe.
Anyway, half the fun of
baking and trying out new recipes is sharing the fruits
of your labor, so in no time at all I was baking batches
for family back home, my neighbors and friends at
work... and getting great reviews. That’s when it
happened. Someone at the office told me, that not only
was the Bizcochito his favorite cookie, but that this
was the Official State Cookie of New Mexico… and that he
thought mine were just about the best he’d ever tasted.
Sometimes, that’s all it takes: a little idea and a LOT
of encouragement, the latter of which I’ve received in
abundance. What I hope YOU discover in my Bizcochitos is
a deliciously unique home-made cookie—with a rich
Hispanic history—that melts in your mouth. May you enjoy
every bite... my Bizcochitos are made with lots of love.
